Bamboo Shoots

You know that the panda eats bamboo. But people do too!
These are bamboo shoots, freshly picked. At the market, you can see women peeling off the tough outer leaves to reveal the tender and edible shoot within.

Here are the shoots. They still have the characteristic bamboo appearance, don’t they? But they are tender enough to eat.

Usually they are cut on the diagonal and boiled in salted water for a short time. The boiling reduces the bitterness. Then they can be stir fried! We like their nutty crunchiness! And I’ve read that they are rich in potassium. Of course, they are high in fiber as well.
