Hot Peppers

Chinese food is varied! That’s one thing that we love the most about it. There is little risk of getting bored because there are many kinds of flavors — sweet, sour, bitter, savory, and hot. Even in the “hot” category there are different types of hot peppers that create different sensations. There is the burning pepper and the numbing pepper.

Hot peppers are called jiao. (Click for pronunciation.)

You can purchase them fresh, dried, whole, or ground.


The longer I live here, the more I love hot peppers. They truly are addictive! After a while, the teaspoonful that made the food spicy no longer seems spicy at all. So you have to add a tablespoon of peppers.

I guess eventually I’ll be like local people who load peppers on everything they eat.
