You may think that mashed potatoes are distinctly American. Surprise! Chinese people eat them too, albeit in a much dressed up form. Usually, they are mashed with bits of garlic and pork or ham.
This ultra-fancy dish in the photo has ham, green onions, and carrots mixed into the potatoes. There’s also a savory sauce and chopped carrots and cucumbers poured over the shaped mound.
Don’t you love the fresh lotus petals? Too pretty to eat. (But of course, we did!) It was delicious!
